Cherry Delight

Can you spot the four leaf clover?

Friday afternoon treats. I worked at one of the local high schools. The AG department was selling these adorable shamrock filled watering cans for $3. There were three left this morning and I bought them all. What do you think of my Cherry Delight? Yum?

I am glad I bought all three of these cuties. Lucas gave one to the family that walks home from school with Lucie. I am giving one to me mum (sorry. I had to do that) on Sunday. She'll be coming over for corned beef and cabbage.

When we got home today we all had a piece of "cherry delight." I thought it would make a nice post........and I wanted some :)

My friend on Facebook posted this on her wall from Pinterest. I had the ingredients by the end of the week and whipped it up last night. Um....delicious! It takes NO baking....
Check out "Creative Carmella" here!

Crust:
1 package of Keebler Sandies Cookies (I used pecan sandies)
1/2 stick butter (room temp)

Topping:
1 small container (8oz)  Cool-Whip (chilled but not frozen)
3 Cups Powdered Sugar
1 block cream cheese (softened)
1 can Cherry Pie Filling

Three steps:

I don't have a lot of free time, so I am always making short cuts. The original recipe tells you to crumble the whole container of cookies in your food processor, place crumbs in a bowl and stir in the butter. I thought, hum....and just tossed the 1/2 stick of butter into the Cuisinart. No dirty bowl, no stirring. I used a smaller baking dish. ~9 3/4 X 9 3/4 Bake 350-20 minutes.

Then again (lazy) I wiped the food processor out with a paper-towel (to get rid of crumbs) added the first three "topping" ingredients to the food processor. mix. pour over cooled cookie crust. Chill for at least 30 minutes.

Pour cherry filling over individual servings. I used country cherry filling.

It's delicious! I hope you get a chance to try this!

Bisous!!!

Karen

  7. The little shamrock watering cans are darling! and that cherry delight is making my mouth "water". It reminds me of a recipe I made years ago, only yours looks and sounds much better because it has cream cheese in it. Yum! The pecan sandies crust sounds really good. Happy St. Patrick's Day!
